  • 4 tbsp vinegar

  • 12 garlic flakes, minced
  • 1 tbsp flour
  • Salt, to taste
  • 1/2 cup coconut milk
  • 1/2 cup green peas
  • 6 potatoes, peeled and cubed
  • 2 carrots, sliced
  • 1 kg veal, cubed

Instructions:

  1. Prepare the Spices:

    • Heat oil in a skillet over medium heat.
    • Fry cinnamon, cloves, cardamom, and black peppercorns until fragrant. Set aside.
  2. Saute Aromatics:

    • In the same skillet, saute ginger, onion slices, green chilies, and garlic until lightly browned. Drain excess oil and set aside.
  3. Prepare the Meat:

    • Add flour to the skillet and saute until lightly browned.
    • Add veal cubes and lightly brown them.
  4. Simmer the Stew:

    • Add vinegar, salt, and coconut milk to the skillet with the veal.
    • Once the coconut milk is half cooked through, add potatoes, green peas, carrots, and the previously sauteed spices and aromatics.
    • Cover the pan and simmer until the gravy reduces and the meat and vegetables are tender.
  5. Finish and Serve:

    • Stir in the remaining coconut milk, bring to a boil, and then remove from heat.
    • Serve the Veal Stew hot, accompanied by bread, rotis, or tortillas.
