Spicy Fried Chicken with Oyster Sauce

Ingredients:

  • 8 pieces of chicken
  • 1/2 stalk of green onion
  • 5 small red chilies, sliced in half
  • Salt, sugar, and pepper to taste
  • Oyster sauce to taste (I used Saori brand)
  • 2 shallots, thinly sliced
  • For the spice paste:
    • 10 red chilies
    • 5 shallots
    • 3 garlic cloves

Instructions:

  1. Prepare the Chicken:

    • Fry the chicken pieces until they are thoroughly cooked. You can choose to first simmer them before frying if preferred.
  2. Prepare the Spice Paste:

    • Blend or grind the red chilies, shallots, and garlic together until you achieve a coarse paste. Avoid making it too fine to maintain some texture.
  3. Cook the Aromatics:

    • Heat a generous amount of cooking oil in a pan. Add the chopped green onion, sliced shallots, and halved red chilies. Sauté until fragrant and the shallots are translucent.
  4. Add the Spice Paste:

    • Incorporate the spice paste into the pan. Cook until the paste is fragrant and the oil starts to separate from the mixture. Season with salt and sugar to taste, adjusting until you achieve the desired level of spiciness.
  5. Simmer the Sauce:

    • Pour in approximately 1/2 cup of water to the pan and stir well. Add the oyster sauce and mix thoroughly. Taste and adjust seasoning with additional salt and pepper if necessary.
  6. Combine and Finish:

    • Return the fried chicken to the pan. Stir well to coat the chicken with the sauce and ensure it is heated through. Allow the sauce to thicken slightly and glaze the chicken.
  7. Serve:

    • Once everything is well combined and heated through, remove from heat. Serve hot and enjoy your spicy, savory fried chicken with a delicious oyster sauce coating.
