Ingredients

Green Capsicum, finely chopped 1
Green Chillies, chopped 4-5
Red Chilli Paste 1 teaspoon
Ginger, finely chopped 1 inch
Garlic, finely chopped 2 cloves
Cumene Seeds (Jeera) 1 teaspoon
Pav Bhaji Masala 1 teaspoon
Turmeric Powder (Haldi) 1/2 teaspoon
Ghee 1 teaspoon
Oil 2 teaspoons
Salt To taste
Coriander (Dhania) Leaves, chopped A handful
For the Pita Pockets Quantity
Whole Wheat Pita Bread 4 (4-5 inch)
Onion, sliced 2
Tomato, cut lengthwise 2
Lemon, cut into wedges 1
Chaat Masala Powder 1 teaspoon

Instructions

  1. Prepare the Egg Bhurji:

    • Start by breaking the eggs into a mixing bowl and whisking them thoroughly with ½ teaspoon of salt. Set this aside.
    • In a large pan, heat the ghee and oil together over medium heat. Add the cumin seeds and let them sizzle and release their fragrance.
    • Once the cumin seeds are sizzling, add the finely chopped onions and sauté for 2-3 minutes, or until they turn lightly browned and softened.
    • Next, add the finely chopped ginger, garlic, and green chilies. Stir for a few seconds until they release a fragrant aroma.
    • Add the red chilli paste and sauté briefly, followed by the chopped tomatoes. Cook the tomatoes for about 1-2 minutes, or until they soften slightly.
    • Add the chopped green capsicum, pav bhaji masala, and a pinch of salt (remember to leave room for salt to be added to the eggs). Mix everything well and cook for another 1-2 minutes, letting the flavors blend.
    • Pour in the whisked eggs and gently stir, allowing the eggs to scramble and absorb all the wonderful masala flavors. Keep stirring continuously, and cook over low-medium heat until the eggs are fully scrambled and well combined with the vegetables and spices.
    • Once the eggs are scrambled to your desired consistency, sprinkle the freshly chopped coriander leaves over the bhurji and turn off the heat. Set the egg bhurji aside for assembling the pita pockets.
  2. Assemble the Pita Pockets:

    • Warm the whole wheat pita bread slightly in a dry pan or oven, making sure they remain soft and pliable.
    • Slice the pita bread open to create pockets, then stuff each pita generously with the prepared egg bhurji.
    • Top the stuffed pita pockets with slices of fresh onion and tomato for added crunch and freshness.
    • Squeeze a wedge of lemon over the filling to give it a zesty kick.
    • Finally, sprinkle a pinch of chaat masala powder over the top for a tangy, spiced finish.
