Spicy Fish Cakes Recipe

Ingredients:

  • 3 spring onions, finely sliced
  • 1/2 red capsicum, finely chopped
  • 2 potatoes, cut into 1cm cubes
  • 1 egg
  • 375g fish fillets, cut into small pieces
  • 2 cups flour
  • 1 tsp salt
  • 1/4 cup parsley, chopped
  • 1/4 cup butter
  • Creole seasoning, to taste

For Frying:

  • Oil, for frying

Instructions:

  1. Prepare the Vegetables:

    • Slice the spring onions finely.
    • Chop the flesh of the red capsicum finely.
    • Cut the potatoes into 1cm cubes.
  2. Season and Mix:

    • Place all the prepared vegetables into a bowl.
    • Add Creole seasoning to taste.
  3. Prepare the Fish Mixture:

    • Cut the fish into small pieces.
    • Mix the fish pieces with the potato mixture.
    • Add eggs, flour, salt, and chopped parsley.
  4. Heat and Cook:

    • Heat a frypan and add oil and butter.
    • Spoon 1 tablespoon of the mixture into the pan.
    • Cook, turning to brown both sides.
  5. Serve:

    • Place the cooked fish cakes on absorbent paper to remove excess oil.
    • Serve with your choice of accompaniment: Corn Salsa, relish, or a fruity chutney.
