Telur Cabe Ijo: A Spicy Green Chili Egg Delight

Ingredients:

  • 10 large eggs
  • 5 large green chilies
  • 1 ripe tomato
  • 5 shallots
  • 3 cloves garlic
  • Sugar and salt, to taste
  • Cooking oil, as needed

Instructions:

  1. Prepare the Eggs: Begin by boiling the eggs until fully cooked. Once boiled, peel them and fry the eggs in a bit of oil until their surfaces become slightly crispy and “curled.” Set them aside.

  2. Make the Chili Paste: In a pot, cook the green chilies, tomato, shallots, and garlic until softened. Drain and blend the mixture until smooth. For a more textured paste, you can grind the ingredients with a mortar and pestle instead of using a blender.

  3. Cook the Paste: Heat some oil in a pan and sauté the blended ingredients until fragrant. Add a splash of water, along with sugar and salt to taste. Continue cooking until the mixture thickens and the flavors meld together.

  4. Combine and Serve: Gently add the fried eggs to the pan, stirring to coat them evenly with the spicy paste. Cook for a few more minutes to ensure the eggs absorb the flavors. Remove from heat and serve warm.

Enjoy your Telur Cabe Ijo, a flavorful Indonesian dish that pairs wonderfully with steamed rice or as a side to your favorite meals!
