Green Chili Omelette (Telor Dadar ke Cabe Ijo)

Ingredients:

  • 4 large eggs
  • 2 stalks of scallions, finely sliced
  • Spice Paste:
    • 15 green bird’s eye chilies
    • 5 shallots
  • Salt, to taste
  • 1 teaspoon MSG (optional)
  • Flour Mixture:
    • 1 tablespoon all-purpose flour
    • 3 tablespoons water

Instructions:

  1. Begin by preparing the spice paste. In a mortar and pestle or a food processor, combine the green chilies and shallots, and grind into a smooth paste.

  2. In a mixing bowl, crack the eggs and add the finely sliced scallions. Stir in the spice paste until well combined. Season with salt and MSG (if using), and whisk the mixture thoroughly to ensure all ingredients are evenly distributed.

  3. Prepare the flour mixture by dissolving the flour in the water. Add this mixture to the egg mixture, and whisk again until fully incorporated. This will give the omelette a slightly thicker texture.

  4. Heat a generous amount of oil in a frying pan over medium heat. Once the oil is hot, pour in a ladleful of the egg mixture. Spread it out evenly with the back of the ladle to form a round omelette.

  5. Cook until the edges are golden and crispy, then flip and cook the other side until done. Adjust the cooking time based on your preference for a softer or firmer omelette.
