Title: Chicken Meatballs with Green Sambal (Pentul Ayam Sambal Ijo)

Ingredients:

For the Chicken Meatballs:

  • 500 grams chicken fillet, cubed
  • 5 tablespoons sago starch
  • 1 egg white
  • 1/2 teaspoon ground pepper
  • 5 cloves garlic, fried
  • 1 teaspoon salt
  • Seasoning powder, to taste
  • 1 teaspoon baking powder

For the Green Sambal:

  • 5 large green chilies
  • A handful of green bird’s eye chilies (adjust to taste)
  • 4 green tomatoes
  • 5 shallots
  • 3 cloves garlic
  • Cooking oil, as needed
  • Salt, sugar, and seasoning powder, to taste

Steps:

  1. Prepare the Chicken Meatballs:

    • Cut the chicken fillet into small cubes and place them in the freezer until slightly frozen.
    • Once semi-frozen, blend the chicken until smooth. (Note: No need to add ice cubes since the chicken is semi-frozen.)
    • In a mortar or food processor, finely grind the fried garlic. Add ground pepper, salt, and seasoning powder.
    • Combine the ground spices with the chicken mixture, then add the egg white, baking powder, and sago starch. Mix well until thoroughly combined.
    • Heat a pot of water until boiling, then turn off the heat. Shape the chicken mixture into small balls and drop them into the hot water.
    • Once all the meatballs are shaped, turn the heat back on and cook until the meatballs float to the surface.
    • Transfer the meatballs into a bowl of ice water to stop the cooking process. Set aside.
  2. Prepare the Green Sambal:

    • Boil all the sambal ingredients (green chilies, bird’s eye chilies, green tomatoes, shallots, and garlic) until fully cooked.
    • Blend the cooked sambal ingredients until smooth.
    • Heat a little cooking oil in a pan and briefly sauté the sambal mixture. Season with salt, seasoning powder, and sugar to taste. Adjust seasoning to your preference.
    • Once the sambal is seasoned to your liking, add the cooked chicken meatballs to the pan and stir until well-coated with sambal.

This recipe yields approximately 50 chicken meatballs, though the final count may vary depending on the size of the meatballs.
