Ikan Kutuk with Kaffir Lime Leaves by JOSHE
Ingredients:
- 1/2 kg ikan kutuk (also known as Gabus or Snakehead Fish)
- 1 handful of green beans (kapri)
- 2 green tomatoes, quartered
- 1 red tomato, cut into eighths
- 3 kaffir lime leaves
- 2 cm galangal, sliced
- 2 cm ginger, sliced
- Water, as needed
- 2 tablespoons oil
- 1 piece of palm sugar, shaved
- 1/2 lemon or lime, juiced
- 1 stalk of green onion, sliced
- 1 teaspoon salt
- Seasoning, to taste
Spice Paste:
- 5 cloves garlic
- 3 shallots
- 3 large red chilies (adjust to taste)

- Clean the ikan kutuk thoroughly to remove any strong fishy odor. Rub the fish with lemon or lime juice and let it sit for 2-3 minutes to neutralize the smell. Avoid marinating too long as it may become bitter.
