Spicy Indian Egg Bhurji: Fluffy Scrambled Eggs with Vegetables

Egg Bhurji (Indian-Style Spiced Scrambled Eggs)

Ingredients:

  • 6 large eggs
  • 3 cloves garlic, minced
  • 1 large red onion (or 6 small shallots), finely chopped
  • 1 medium onion, coarsely chopped
  • 1 small green bell pepper, diced
  • 1 large red chili, chopped
  • 6 small green chilies, chopped
  • 1 small tomato, diced
  • 1 small bunch of scallions, chopped
  • 3 cm piece of ginger, grated and minced
  • Oil for sautéing
  • Salt, to taste
  • Red chili powder, to taste
  • Black pepper, to taste
  • Garam masala or spice mix (optional)
  • Alternatively, use Boncabe level 10/15, keeping in mind it will alter the traditional Indian flavor

Instructions:

  1. Prepare the Ingredients:

    • Gather all the ingredients as shown in the recipe image.
  2. Beat the Eggs:

    • In a separate bowl, beat the eggs until frothy. This will help the eggs mix better with the other ingredients during cooking and result in a fluffier texture.
  3. Sauté the Vegetables:

    • Heat some oil in a pan over medium heat. Add the garlic, red onion, coarsely chopped onion, green bell pepper, red chili, green chilies, tomato, and minced ginger.
    • Sauté the mixture briefly until the vegetables are slightly softened and their aroma is released. This step helps in ensuring that the vegetables are cooked and fragrant when mixed with the eggs.
  4. Combine with Eggs:

    • Add the sautéed vegetable mixture to the beaten eggs. Season with salt to taste. If desired, add the garam masala or your choice of spice mix at this stage.
    • Stir to combine everything thoroughly, ensuring the spices are well incorporated into the egg mixture.
  5. Cook the Bhurji:

    • Heat a small amount of oil in a pan over medium heat. Pour in the egg mixture and cook, stirring frequently to prevent the eggs from clumping.
    • As the eggs begin to set, sprinkle in the remaining spices (red chili powder, black pepper) and adjust the heat to your preference for spiciness. Continue to cook until the eggs are fully cooked and the mixture is dry.
  6. Serve:

    • Serve the Egg Bhurji hot with steamed rice, chapati, naan, or roti maryam. Enjoy this flavorful Indian-style scrambled egg dish!
