Ayam Geprek Recipe: Indonesian Fried Chicken with Chili Sauce

Ingredients:

  • 500 grams chicken, cut into pieces
  • 1 packet fried chicken seasoning flour
  • 10 red chilies
  • 6 bird’s eye chilies
  • 3 shallots
  • 3 garlic cloves
  • 1/4 cup cooking oil
  • Salt, to taste
  • Seasoning powder (optional)

Instructions:

  1. Prepare the Chicken: Start by thoroughly washing the chicken pieces. To ensure the chicken is completely clean and free of blood, you might choose to briefly boil the pieces. After cleaning, season the chicken with salt and black pepper.

  2. Prepare the Coatings: Set up two separate bowls—one for the wet batter and one for the dry coating. Use the fried chicken seasoning flour for the dry coating and follow the instructions on the packet to prepare the wet batter.

  3. Coat the Chicken: Dip each piece of chicken into the wet batter, ensuring it is fully coated. Then, transfer the chicken to the dry coating mixture, pressing lightly to ensure a good coverage.

  4. Fry the Chicken: Heat the cooking oil in a pan over medium heat. Fry the chicken pieces in the hot oil until they turn golden brown and crispy. Remove the chicken and drain on paper towels.

  5. Prepare the Chili Sauce: While the chicken is frying, prepare the chili sauce. Grind the red chilies, bird’s eye chilies, shallots, and garlic together in a mortar and pestle or a food processor. Add salt to taste and a pinch of seasoning powder if desired.

  6. Combine and Serve: Once the chili sauce is nearly smooth, place the fried chicken pieces on top of the chili sauce. Gently smash or “geprek” the chicken with the back of a spoon or a pestle, allowing the flavors to meld together.

  7. Serve: Your Ayam Geprek is now ready to be served. Enjoy this flavorful and spicy Indonesian dish with your favorite side dishes or rice.
