Telur Balado: A Spicy Indonesian Delight

Ingredients:

  • 10 large eggs
  • For the Spice Paste:
    • 15 red chilies (cabe keriting)
    • 6 red bird’s eye chilies (cabe rawit merah) (omit if you prefer less heat)
    • 5 shallots (bawang merah)
    • 3 cloves garlic (bawang putih)
    • 1 tomato
    • Brown sugar (gula aren) (to taste)
    • Salt (to taste)

Instructions:

  1. Prepare the Eggs:

    • Place the eggs in a pot and cover with water. Bring to a boil and cook for 15-20 minutes until hard-boiled.
    • Once cooked, drain the hot water and replace it with cold water. Let the eggs sit in the cold water for easier peeling.
  2. Fry the Eggs:
