Instructions:

  1. Prepare the Eggs:

    • Place the eggs in a pot, ensuring they are covered with water. Bring to a boil and let them cook for about 20 minutes to achieve a hard-boiled consistency.
    • Once cooked, remove the eggs from the pot, let them cool slightly, then peel and set aside.
  2. Fry the Eggs:

    • Heat some oil in a pan over medium heat. Gently fry the peeled eggs until they are golden brown. Remove the eggs from the oil and drain on paper towels.
  3. Prepare the Spice Paste:

    • In a mortar and pestle or food processor, grind together the tomatoes, bird’s eye chilies, and garlic until a smooth paste forms. Set the paste aside.
    • Thinly slice the shallots.
  4. Cook the Shallots:

    • In a pan, heat a small amount of oil over medium heat. Add the sliced shallots and sauté until they become soft and translucent.
  5. Combine and Cook:

    • Add the prepared spice paste to the pan with the shallots. Cook the mixture for about 5 minutes, allowing the flavors to meld together and the paste to thicken slightly.
    • Add the fried eggs to the pan, followed by a splash of kecap bangau (sweet soy sauce) and a pinch of sugar. Stir to coat the eggs evenly.
    • Season with Masako (seasoning) to taste. Adjust the seasoning if necessary and cook for a few more minutes until the eggs are well-coated and heated through.
  6. Serve:
