Jangan Lombok Campur Daging Sapi Versi Merah (Red Spicy Beef and Tempeh Stew)

Ingredients:

  • 250 grams tempeh (approximately 1 small block), cut into cubes
  • 200 grams beef (already pre-cooked), cut into cubes
  • 100 grams curly green chilies, sliced
  • 10 cloves shallots, sliced
  • 5 cloves garlic, sliced
  • A handful of whole bird’s eye chilies
  • 5 bay leaves
  • 5 cm galangal, bruised
  • 1 stalk lemongrass, bruised
  • 700 ml beef broth
  • 300 ml thick coconut milk
  • 1 tablespoon palm sugar
  • Granulated sugar, to taste
  • Salt, to taste
  • Powdered broth seasoning, to taste
  • Cooking oil, for sautéing

Spice Paste:

  • 1 large red chili (add more if desired)
  • 1 segment of turmeric
  • 1 segment of aromatic ginger (kencur)
  • 3 candlenuts

Instructions:

  1. Prepare the Ingredients:

    • Begin by cutting the tempeh and pre-cooked beef into bite-sized cubes. Set aside.
    • Slice the curly green chilies, shallots, and garlic.
  2. Make the Spice Paste:

    • In a mortar or blender, grind the large red chili, turmeric, aromatic ginger (kencur), and candlenuts into a smooth paste. Set aside.
  3. Sauté Aromatics:

    • Heat some cooking oil in a large pan over medium heat.
    • Add the sliced shallots, garlic, curly green chilies, bay leaves, lemongrass, and galangal. Sauté until fragrant and the shallots turn translucent.
  4. Add the Spice Paste:

    • Add the prepared spice paste to the pan. Sauté and stir continuously until the paste is fragrant and cooked through.
  5. Combine Tempeh and Beef:

    • Add the cubed tempeh and beef to the pan. Stir to coat them evenly with the spice mixture. Sauté briefly to allow the flavors to meld.
  6. Simmer with Broth and Coconut Milk:

    • Pour in the beef broth and thick coconut milk. Stir to combine.
    • Add the palm sugar, granulated sugar, salt, and powdered broth seasoning. Stir well to dissolve the sugars and seasonings.
  7. Cook Until Done:

    • Reduce the heat to low and let the stew simmer gently. Cook until the liquid is reduced, the flavors have melded together, and oil starts to separate on the surface.
    • This process should take about 30-40 minutes. Stir occasionally to prevent sticking and ensure even cooking.
  8. Final Adjustments:

    • Taste the stew and adjust the seasoning if needed by adding more salt, sugar, or broth seasoning according to your preference.
  9. Serve:

    • Once the stew is thickened and cooked through, remove it from the heat.
    • Serve hot with steamed rice for a comforting and flavorful meal.
