Ingredients:
- 250 grams tempeh (approximately 1 small block), cut into cubes
- 200 grams beef (already pre-cooked), cut into cubes
- 100 grams curly green chilies, sliced
- 10 cloves shallots, sliced
- 5 cloves garlic, sliced
- A handful of whole bird’s eye chilies
- 5 bay leaves
- 5 cm galangal, bruised
- 1 stalk lemongrass, bruised
- 700 ml beef broth
- 300 ml thick coconut milk
- 1 tablespoon palm sugar
- Granulated sugar, to taste
- Salt, to taste
- Powdered broth seasoning, to taste
- Cooking oil, for sautéing
Spice Paste:
- 1 large red chili (add more if desired)
- 1 segment of turmeric
- 1 segment of aromatic ginger (kencur)
- 3 candlenuts
