Ingredients
- 1 kg beef koyor (beef shank)
- 5 shallots, thinly sliced
- 2 cloves garlic, thinly sliced
- 3 red bird’s eye chilies (adjust according to your heat preference)
- 2 red chilies, thinly sliced
- 1/2 tomato, halved
- 2 bay leaves
- 2 kaffir lime leaves
- 1 stalk lemongrass, bruised
- 1 thumb-sized piece of ginger, bruised
- 1 thumb-sized piece of galangal, bruised
- 1 tablespoon liquid palm sugar
- 1 teaspoon ground black pepper
- 1 tablespoon sweet soy sauce
- 2 tablespoons vegetable oil
- Sugar to taste
- Salt to taste
- Flavor enhancer (optional)
- 150 ml beef broth
- 1 liter water (for boiling beef and making broth)

Prepare the Beef:
- Cut the beef koyor into small, bite-sized pieces. Fill a pot with cold water and add the beef pieces. Bring to a boil, skimming off any impurities that rise to the surface. Discard the water and strain the beef.

- In a clean pot, add 1 liter of fresh cold water along with a pinch of salt and pepper. Add the beef pieces and simmer until tender, approximately 1 to 2 hours depending on the cut and size of the beef. Once tender, drain and set aside.

- Heat vegetable oil in a pan over medium heat. Add the sliced shallots and garlic, sautéing until they become translucent and fragrant.

- Incorporate the sliced red chilies, bay leaves, kaffir lime leaves, bruised ginger, lemongrass, and galangal into the pan. Sauté until the mixture becomes aromatic.

- Add the pre-cooked beef koyor to the pan. Stir well to coat the beef with the aromatic mixture.
