Oseng Koyor Sapi Recipe: A Flavorful Indonesian Beef Delight

Oseng Koyor Sapi, a delectable Indonesian dish, features tender beef simmered with aromatic spices and herbs. This recipe will guide you through the steps to create a rich and savory dish that combines the sweetness of palm sugar with the zestiness of fresh chili and the depth of spices. Ingredients

  • 1 kg beef koyor (beef shank)
  • 5 shallots, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 3 red bird’s eye chilies (adjust according to your heat preference)
  • 2 red chilies, thinly sliced
  • 1/2 tomato, halved
  • 2 bay leaves
  • 2 kaffir lime leaves
  • 1 stalk lemongrass, bruised
  • 1 thumb-sized piece of ginger, bruised
  • 1 thumb-sized piece of galangal, bruised
  • 1 tablespoon liquid palm sugar
  • 1 teaspoon ground black pepper
  • 1 tablespoon sweet soy sauce
  • 2 tablespoons vegetable oil
  • Sugar to taste
  • Salt to taste
  • Flavor enhancer (optional)
  • 150 ml beef broth
  • 1 liter water (for boiling beef and making broth)

Instructions

  1. Prepare the Beef:

    • Cut the beef koyor into small, bite-sized pieces. Fill a pot with cold water and add the beef pieces. Bring to a boil, skimming off any impurities that rise to the surface. Discard the water and strain the beef.
  2. Cook the Beef:

    • In a clean pot, add 1 liter of fresh cold water along with a pinch of salt and pepper. Add the beef pieces and simmer until tender, approximately 1 to 2 hours depending on the cut and size of the beef. Once tender, drain and set aside.
  3. Prepare the Spice Base:

    • Heat vegetable oil in a pan over medium heat. Add the sliced shallots and garlic, sautéing until they become translucent and fragrant.
  4. Add Aromatics and Chilies:

    • Incorporate the sliced red chilies, bay leaves, kaffir lime leaves, bruised ginger, lemongrass, and galangal into the pan. Sauté until the mixture becomes aromatic.
  5. Combine Beef and Spices:

    • Add the pre-cooked beef koyor to the pan. Stir well to coat the beef with the aromatic mixture.
  6. Season the Dish:

    • Pour in the sweet soy sauce and add the liquid palm sugar. Season with salt, sugar, black pepper, and a flavor enhancer if desired. Mix thoroughly.
  7. Add Broth and Simmer:

    • Pour in the beef broth and bring to a gentle simmer. Continue cooking until the sauce reduces and thickens, allowing the flavors to meld together beautifully.
  8. Adjust the Flavor:

    • Taste and adjust seasoning as needed. If the sauce needs a touch more sweetness or salt, add accordingly.
  9. Serve:

    • Transfer the Oseng Koyor Sapi to a serving dish. Garnish with crispy fried shallots for an added layer of texture and flavor.
