Indonesian Beef Tongseng Without Coconut Milk

Ingredients:

  • 1 kg beef (I used sirloin), cut into small pieces
  • 1/2 head of cabbage, roughly chopped into large pieces
  • 1 tomato, cut into quarters (add more if desired)
  • 6 red bird’s eye chilies, left whole
  • 1 stalk lemongrass, smashed
  • 2-inch piece of ginger, smashed
  • 2-inch piece of galangal, smashed
  • 3 kaffir lime leaves, torn
  • 4 bay leaves
  • 2 tablespoons cooking oil
  • 2 tablespoons sweet soy sauce
  • 250 ml water
  • Salt to taste
  • Sugar to taste
  • Seasoning (optional)

For the Spice Paste:

  • 7 shallots
  • 4 garlic cloves
  • 3 candlenuts
  • 1-inch piece of turmeric
  • 3 red curly chilies
  • 3/4 tablespoon coriander seeds
  • 1/2 tablespoon black pepper

Instructions:

  1. Prepare the Beef:

    • Place the beef in a pot with cold water. Bring to a boil and cook until impurities rise to the surface. Discard the water, and drain the beef. Set aside.
  2. Prepare the Spice Paste:

    • Blend or grind the shallots, garlic, candlenuts, turmeric, red chilies, coriander seeds, and black pepper until smooth.
  3. Cook the Spice Paste:

    • Heat the cooking oil in a large pot over medium heat. Add the spice paste and cook until fragrant and partially cooked.
  4. Add Aromatics:

    • Add the ginger, galangal, lemongrass, kaffir lime leaves, and bay leaves. Stir well.
  5. Combine Beef with Spices:

    • Add the beef to the pot, stirring to coat with the spice mixture. Let it cook for a minute or two to absorb the flavors.
  6. Simmer:

    • Pour in the water, sweet soy sauce, sugar, salt, and seasoning if using. Bring to a boil, then reduce the heat and simmer until the beef is tender.
  7. Add Vegetables:

    • Add the red bird’s eye chilies, cabbage, and tomato. Continue cooking until the vegetables are tender. If you prefer more broth, add a little hot water to adjust the consistency.
  8. Final Touches:

    • Taste and adjust the seasoning as needed. Serve hot and enjoy!
