Indonesian Spicy Chicken (Ayam Sambal Balado)

Ingredients:

  • 1 whole chicken
  • 4 shallots
  • 3 garlic cloves
  • 4 large red chilies
  • 20 bird’s eye chilies (cabe rawit)
  • 3 candlenuts (kemiri)
  • 1 small piece of turmeric
  • Salt, to taste
  • MSG (optional)
  • Sugar, to taste
  • Chicken stock powder (Royco Ayam), to taste

Instructions:

  1. Prepare the Chicken:

    • Grind 1 garlic clove, 3 candlenuts, and turmeric with a pinch of salt until smooth. Rub this mixture all over the chicken.
    • Place the chicken in a pot, cover with water, and boil until cooked through. Remove the chicken and let it cool.
  2. Make the Sambal Balado:

    • Grind all the red chilies, bird’s eye chilies, shallots, and remaining garlic cloves with salt until smooth.
  3. Fry the Chicken:

    • Heat a little oil in a pan and fry the boiled chicken until golden brown and cooked thoroughly.
  4. Combine and Serve:

    • In another pan, heat a bit of oil and sauté the sambal balado mixture until fragrant.
    • Add the fried chicken into the sambal balado mixture. Stir well to coat the chicken evenly.
    • Season with a bit of chicken stock powder (Royco Ayam), adjusting salt and sugar to taste.
  5. Serve:

    • Ayam Sambal Balado is best served hot with steamed rice.
