Ayam Rica-Rica Recipe
Ingredients:
- 1/2 whole chicken (cut into 7 pieces)
- 2 stalks lemongrass (crushed)
- 1 bay leaf
- 2 kaffir lime leaves
- 1 bunch Thai basil leaves
- 1 stalk green onion (chopped thickly)
- Cooking oil (for sautéing)
- Salt
- Granulated sugar
For the Spice Paste:
- 6 shallots
- 6 cloves garlic
- 6 red curly chilies
- 6 red bird’s eye chilies (or adjust to taste)
- 1-inch piece of turmeric
- 1-inch piece of ginger

Prepare the Chicken:
- Rub the chicken pieces with lime juice and salt. Allow it to marinate for about 10 minutes.
- After marinating, rinse the chicken thoroughly and fry in hot oil until it is half-cooked. Set aside.

Make the Spice Paste:
- In a blender or food processor, blend the shallots, garlic, red curly chilies, red bird’s eye chilies, turmeric, and ginger into a smooth paste.

Cook the Spice Paste:
- Heat some oil in a pan over medium heat. Sauté the spice paste until fragrant and the raw smell has dissipated.
- Add the bay leaf, kaffir lime leaves, and lemongrass. Cook for a few minutes until aromatic.

Combine Chicken and Spices:
- Add a small amount of water to the pan and then add the partially cooked chicken pieces.
- Simmer until the chicken is fully cooked and the flavors are well absorbed by the meat.

Season and Finish:
- Add salt and granulated sugar to taste. Adjust the seasoning as needed.
- Once the chicken is tender and the flavors are balanced, turn off the heat.

- Stir in the Thai basil leaves and green onions. Mix well and let it sit for a few minutes to allow the flavors to meld.
