Spicy Balado Chicken with Anchovies

Ingredients:

  • 1 whole chicken, cut into pieces
  • 1 oz fried dried anchovies (ikan teri goreng)
  • 1 tomato, diced
  • 5 stalks of Chinese chives (kucai)
  • 3 bay leaves and kaffir lime leaves
  • 1 tsp tamarind paste (asam jawa)
  • Brown sugar
  • Salt
  • Water
  • Cooking oil

Spice Paste:

  • 5 red chilies
  • 2 cloves garlic
  • 5 shallots
  • 1 candlenut (kemiri)

Instructions:

  1. Prepare the Spice Paste: Grind red chilies, garlic, shallots, and candlenut into a smooth paste.

  2. Sauté the Spice Paste: Heat cooking oil in a pan, then sauté the spice paste until fragrant and slightly browned.

  3. Add Water: Pour enough water into the pan to create a sauce that will allow the chicken to absorb the flavors.

  4. Cook the Chicken and Anchovies: Add the chicken pieces and fried anchovies to the pan, stirring well to coat them in the spice paste.

  5. Seasoning: Add bay leaves, kaffir lime leaves, brown sugar, salt, tamarind paste, diced tomatoes, and continue stirring until the sauce reduces slightly.

  6. Add Chinese Chives: Once the chicken is cooked through and tender, add the sliced Chinese chives to the pan. Stir to combine all ingredients evenly.

  7. Final Touch: Ensure all ingredients are well mixed and cooked. Remove from heat.

  8. Serve: Transfer the Ayam Sambal Balado Teri to a serving dish and enjoy it hot with steamed rice.
