Ayam Cabai Kawin

Ingredients

  • 1/4 kg chicken, diced
  • 3 large green chilies
  • 7 red bird’s eye chilies
  • 3 cloves garlic
  • 2 shallots
  • Sugar, to taste
  • Salt, to taste
  • 1/4 red tomato
  • Water, as needed
  • Cooking oil, as needed

Instructions

  1. Prepare the Chicken:
Begin by heating a generous amount of cooking oil in a wok over medium heat. Once the oil is hot, add the diced chicken. Fry the chicken until it is thoroughly cooked and golden brown. Remove the chicken from the oil and set it aside to drain on paper towels.

  2. Make the Spice Paste:
Using a mortar and pestle or a blender, finely grind the garlic, shallots, green chilies, red bird’s eye chilies, and tomato until they form a smooth paste.

  3. Cook the Spice Paste:
In a clean wok, heat a small amount of oil over medium heat. When the oil is hot, add the spice paste. Stir-fry the paste until it becomes fragrant and its color deepens.

  4. Combine Chicken and Spice Paste:
Add the fried chicken to the wok with the spice paste. Stir well to coat the chicken evenly with the paste.

  5. Season and Simmer:
Pour in enough water to create a sauce, and season with sugar and salt to taste. Stir to combine, then let the mixture simmer for a few minutes until the chicken absorbs the flavors of the spices and the sauce thickens slightly.

  6. Serve:
Once the chicken is fully infused with the spicy sauce, remove from heat. Serve the Ayam Cabai Kawin hot, garnished with extra slices of fresh green chilies or a sprinkle of chopped herbs if desired. Enjoy this fiery and flavorful dish with a side of steamed rice.

Tips for Success:

  • Adjust Spice Levels: If you prefer a milder dish, reduce the amount of bird’s eye chilies. For an extra kick, add more!
  • Tomato Substitute: If tomatoes are not available, a small amount of tomato paste can be used as a substitute to achieve the desired flavor and color.
  • Garnishing Ideas: Fresh cilantro or parsley can add a burst of color and a touch of freshness to the finished dish.

Ayam Cabai Kawin is a delightful Indonesian dish that brings together tender chicken and a vibrant, spicy sauce. Perfect for those who love bold flavors, this dish is sure to become a favorite in your household. Enjoy cooking and savoring this spicy treat!
