Ayam Sambal Matah Kecap Recipe

Ingredients:

  • 1/2 kg chicken, cut into pieces
  • Ground Spices:
    • Salt, to taste
    • Turmeric, to taste
    • Coriander, to taste
  • Sliced Spices:
    • 7 bird’s eye chilies
    • 5 shallots
  • Additional Ingredients:
    • Sweet soy sauce (kecap manis), 1 tablespoon
    • Soy sauce (kecap asin), 1 tablespoon
    • Salt, to taste
    • Chicken bouillon powder, to taste
    • Cooking oil, for frying

Instructions:

  1. Prepare the Chicken:

    • Wash the chicken pieces thoroughly and coat them with the ground spices mixture. Let them marinate for a few moments to allow the flavors to infuse.
  2. Fry the Chicken:

    • Heat oil in a pan over medium heat. Fry the chicken pieces until they are cooked through and golden brown. Once done, remove them from the oil and drain on paper towels.
  3. Prepare the Sambal Matah:

    • In a heat-resistant bowl, combine the sliced bird’s eye chilies and shallots. Add the chicken bouillon powder. Heat a small amount of oil until hot and pour it over the sliced spices. Gently mix with a spoon to combine, allowing the flavors to meld.
  4. Combine Chicken and Sambal Matah:

    • Place the fried chicken pieces into the bowl with the sambal matah. Drizzle the sweet soy sauce and soy sauce over the chicken. Adjust the seasoning with additional salt and mix everything thoroughly until well combined.
  5. Serve:

    • Transfer the ayam sambal matah kecap to a serving plate and enjoy!
