Stir-Fried Egg Pasta Delight (Tumis Telur Pasta AB)

Ingredients

  • 100 grams pasta
  • 3 eggs
  • 1 scallion, finely chopped
  • 1 celery stalk, finely chopped
  • 2 large green chilies, sliced
  • 10 small green chilies, sliced
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 teaspoon salt
  • 3 tablespoons ABC shrimp paste chili sauce (sambal terasi ABC)
  • 4 shallots, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 4 tablespoons cooking oil

Preparation Steps

  1. Cook the Pasta:

    • Bring a pot of water to a boil.
    • Add the pasta and cook until tender.
    • Drain and set aside.
  2. Prepare the Stir-Fry:

    • Heat the cooking oil in a large pan over medium heat.
    • Sauté the sliced shallots and garlic until they become fragrant and golden.
    • Add the chopped scallion, celery, and both types of green chilies to the pan. Stir-fry until the vegetables are fragrant and slightly softened.
  3. Add the Eggs:

    • Crack the eggs into the pan and stir continuously to scramble them.
    • Once the eggs are cooked and well incorporated with the vegetables, add the cooked pasta.
  4. Season and Finish:

    • Pour in the sweet soy sauce and add the salt. Stir well to ensure the pasta is evenly coated.
    • Add the sambal terasi ABC and continue to stir-fry until the pasta turns a reddish-brown color, indicating it is well mixed with the sauce.
  5. Serve:

    • Remove from heat and transfer to a serving dish.
    • Enjoy this flavorful stir-fried egg pasta while it’s still hot.

Additional Tips

  • For added flavor, garnish with a sprinkle of fried shallots or a handful of fresh cilantro.
  • Adjust the number of chilies to your preferred spice level. If you prefer a milder dish, reduce the amount of small green chilies.
