Stir-Fried Egg Pasta Delight (Tumis Telur Pasta AB)
Ingredients
- 100 grams pasta
- 3 eggs
- 1 scallion, finely chopped
- 1 celery stalk, finely chopped
- 2 large green chilies, sliced
- 10 small green chilies, sliced
- 2 tablespoons sweet soy sauce (kecap manis)
- 1 teaspoon salt
- 3 tablespoons ABC shrimp paste chili sauce (sambal terasi ABC)
- 4 shallots, thinly sliced
- 2 cloves garlic, thinly sliced
- 4 tablespoons cooking oil
Preparation Steps

Cook the Pasta:
- Bring a pot of water to a boil.
- Add the pasta and cook until tender.
- Drain and set aside.

Prepare the Stir-Fry:
- Heat the cooking oil in a large pan over medium heat.
- Sauté the sliced shallots and garlic until they become fragrant and golden.
- Add the chopped scallion, celery, and both types of green chilies to the pan. Stir-fry until the vegetables are fragrant and slightly softened.

Add the Eggs:
- Crack the eggs into the pan and stir continuously to scramble them.
- Once the eggs are cooked and well incorporated with the vegetables, add the cooked pasta.

Season and Finish:
- Pour in the sweet soy sauce and add the salt. Stir well to ensure the pasta is evenly coated.
- Add the sambal terasi ABC and continue to stir-fry until the pasta turns a reddish-brown color, indicating it is well mixed with the sauce.

- Remove from heat and transfer to a serving dish.

Additional Tips
- For added flavor, garnish with a sprinkle of fried shallots or a handful of fresh cilantro.
- Adjust the number of chilies to your preferred spice level. If you prefer a milder dish, reduce the amount of small green chilies.
