  • 7 shallots
  • 5 cloves garlic
  • Salt to taste
  • Seasoning to taste
  • Sugar to taste
  • Cooking oil as needed

Instructions

  1. Prepare Ingredients: Gather all ingredients and ensure they are ready for cooking. Peel and fry the hard-boiled eggs until golden brown, then set aside.
  2. Blend the Spices: In a blender, combine the large red chilies, red bird’s eye chilies, shallots, and garlic. Blend until smooth.
  3. Cook the Spice Mixture: Heat a generous amount of cooking oil in a pan over medium heat. Add the blended spice mixture and sauté until fragrant and the oil starts to separate from the spices.
  4. Add Aromatics: Add the sliced tomato, bay leaves, and crushed galangal to the pan. Stir well to combine and let it cook until the tomatoes soften.
  5. Seasoning: Season the mixture with salt, seasoning, and sugar to taste. Adjust the seasoning according to your preference.
  6. Combine with Eggs and Petai: Add the fried eggs and petai beans to the pan. Stir gently to coat the eggs and petai with the spice mixture. Continue to cook for a few more minutes to allow the flavors to meld together.
  7. Taste and Adjust: Taste the dish and adjust the seasoning if needed. Once everything is well combined and heated through, remove the pan from the heat.
  8. Serve: Transfer the Balado Telur Petai to a serving dish and enjoy it as a flavorful accompaniment to steamed rice.
