Balado Terong Telur Ceplok

Ingredients:

For the Spice Paste:

  • 2 shallots
  • 1 garlic clove
  • 6 curly red chilies
  • 1 tomato
  • Sugar, to taste
  • Salt, to taste

Main Ingredients:

  • 1 egg
  • 1 eggplant (aubergine)

Instructions:

  1. Prepare the Spice Paste:

    • Boil the shallots, garlic, and curly red chilies until softened. Drain and grind them into a paste, along with the tomato. Season with sugar and salt to taste.
  2. Fry the Egg and Eggplant:

    • Heat a pan and fry the egg until cooked to your preference. Set aside. In the same pan, fry the eggplant slices until golden and tender. Remove from the pan and set aside.
  3. Cook the Spice Paste:

    • In the same pan, add a bit of oil if needed and sauté the ground spice paste until fragrant and slightly caramelized.
  4. Combine Ingredients:

    • Add the fried egg and eggplant slices into the pan with the spice paste. Stir gently to coat everything evenly. Ensure the spices do not dry out; adjust seasoning if necessary.
  5. Serve:
