Telor Balado: A Flavorful Indonesian Spicy Egg Dish

Ingredients

Chicken bouillon (Royco) 1 tablespoon or to taste

Instructions

  1. Boil the Eggs: Begin by boiling the eggs in water until they are fully cooked, approximately 10-12 minutes. While the eggs are boiling, prepare the spice paste.

  2. Prepare the Spice Paste: Roughly chop the curly red chilies, large red chilies, bird’s eye chilies, shallots, garlic, and the tomato. Place these ingredients into a blender, adding a small amount of water to assist in blending. Blend until you achieve a smooth paste.

  3. Fry the Eggs: Once the eggs are boiled and cooled, peel them carefully. To prevent the eggs from cracking while frying, gently poke several holes in each egg with a fork. Heat the cooking oil in a frying pan over medium heat and fry the eggs until the surface is golden brown. Remove the eggs from the oil and set them aside.

  4. Sauté the Spice Paste: In the same pan, using the oil left from frying the eggs, add the prepared spice paste and the kaffir lime leaves. Sauté for a few minutes until the paste is fragrant and the oil begins to separate.

  5. Season the Mixture: Add the chicken bouillon and granulated sugar to the sautéed mixture. Stir well and allow it to cook until the mixture thickens slightly.

  6. Combine and Serve: Gently add the fried eggs back into the pan, stirring to coat them evenly with the spice mixture. Cook for a few more minutes until the sauce thickens and adheres to the eggs.

  7. Final Touch: Once done, remove from heat and transfer the dish to a serving plate. Enjoy your Telor Balado as a delightful accompaniment to steamed rice or as a standalone dish.
