Balado Telor Ceplok (Spicy Fried Eggs)

Ingredients

Quantity Ingredient
4 large Eggs
5 cloves Shallots
3 cloves Garlic
8 red chilies (adjust to taste)
2 bird’s eye chilies (adjust to taste)
1 ripe Tomato
3 candlenuts
1/2 packet ABC shrimp paste
To taste Granulated sugar
To taste Salt
To taste Seasoning

Instructions

  1. Prepare the Eggs: Crack the eggs into a hot skillet, sprinkling a bit of salt and pepper on top. If you prefer less spice, feel free to skip the pepper. Repeat until all eggs are cooked, then set aside.

  2. Make the Spice Paste: In a blender, combine shallots, garlic, red chilies, bird’s eye chilies, tomato, and candlenuts, blending until smooth. In a frying pan, heat a little cooking oil and sauté the spice paste. Add the shrimp paste and continue to sauté until fragrant.

  3. Combine Flavors: Pour in a small amount of water, then add granulated sugar, salt, and seasoning. Adjust the taste as needed.

  4. Finish the Dish: Gently add the fried eggs back into the pan, pressing them down lightly to coat with the spice mixture. Stir to ensure the eggs are evenly coated, then turn off the heat.
