Telur Ceplok Sambel: A Delightful Indonesian Fried Egg with Spicy Tomato Sauce

Ingredients:

  • 2 eggs (fried)
  • 1/2 tomato, chopped
  • Curly chili peppers, sliced (to taste)
  • Masako chicken seasoning (to taste)
  • Sugar (to taste)
  • Water (as needed)
  • Oil (for frying)

For the Spice Paste:

  • 3 curly chili peppers
  • 4 shallots
  • 2 cloves garlic
  • 1/2 tomato

Instructions:

  1. Prepare the Fried Eggs: Heat oil in a pan over medium heat. Fry the eggs until the whites are crispy and the yolks are cooked to your liking. Remove the eggs from the pan and set aside.

  2. Make the Spice Paste: In a blender or food processor, combine the curly chili peppers, shallots, garlic, and 1/2 tomato. Blend until you achieve a smooth paste.

  3. Cook the Sauce: In the same pan used for frying the eggs, add a bit more oil if needed. Add the spice paste and sauté over medium heat until fragrant and the oil begins to separate from the paste.

  4. Add Flavorings: Pour in a small amount of water to achieve the desired consistency. Stir in Masako chicken seasoning and a pinch of sugar to taste. Allow the sauce to simmer for a few minutes until it thickens slightly and the flavors meld together.

  5. Combine and Serve: Gently fold the fried eggs into the sauce, ensuring they are evenly coated. Cook for another minute or two, allowing the eggs to absorb some of the flavors.

  6. Enjoy: Serve your Telur Ceplok Sambel warm with steamed rice or as a side dish.
