Ingredients

  • 5 large green chilies
  • 25 small green bird chilies
  • 1 green tomato
  • 2 stalks lemongrass, smashed
  • 3 lime leaves
  • Salt, to taste
  • Sugar, to taste

Instructions

  1. Prepare the Marinade:

    • Combine all marinade ingredients except lemongrass and lime leaves in a blender or food processor. Blend until smooth.
    • Mix the ground spices with the chicken pieces in a large bowl. Add lemongrass and lime leaves.
    • Add enough water to cover the chicken, season with salt and chicken bouillon powder. Cook the mixture until the chicken is fully cooked and tender. Adjust seasoning to taste.
  2. Prepare the Green Chili Sambal:

    • Boil all sambal ingredients until slightly softened. Remove from heat and drain.
    • Separate the garlic and shallots from the chilies and set aside.
    • Blend the garlic and shallots until smooth. Set aside.
    • Coarsely grind the chilies and green tomato together. Set aside.
  3. Fry the Chicken:

    • Heat oil in a frying pan over medium heat.
    • Fry the marinated chicken pieces until golden brown. Remove and drain on paper towels.
  4. Cook the Sambal:

    • In the same pan, sauté the sambal ingredients along with lemongrass and lime leaves until fragrant.
    • Add a pinch of sugar and salt to taste. Stir well.
    • Add a small amount of water if necessary to achieve desired consistency.
    • Add the fried chicken to the sambal. Stir to coat the chicken thoroughly with the sambal mixture. Cook until the chicken is well coated and heated through. Adjust seasoning as needed.
