Title: Tongkol and Jengkol Balado Recipe

Ingredients:

  • 1/4 kg of sliced mackerel tuna (tongkol)
  • 10 pieces of mature jengkol beans, split
  • Juice of 1 lime
  • Cooking oil
  • Salt and mushroom bouillon to taste

Spice Paste:

  • 1 ounce of curly red chilies
  • 1 clove of garlic
  • 7 shallots

Steps:

  1. Rinse the mackerel tuna thoroughly, then marinate with lime juice and a pinch of salt. Let it sit for a while.

  2. Heat cooking oil in a pan, add the jengkol beans and cook until tender. Remove the skins and flatten them. Set aside.

  3. Fry the mackerel tuna in the same oil until cooked through. Remove and drain on paper towels.

  4. If the oil is too dirty, replace it with fresh oil. Add the spice paste and sauté until fragrant. Season with salt and mushroom bouillon, cooking until the raw chili smell dissipates.

  5. Once the seasoning is right, mix in the mackerel tuna and jengkol beans until evenly coated with the balado seasoning.
