- 2 Kaffir Lime Leaves

- 1 piece Asam Kandis (dried sour fruit)
- 2 cups Water
For the Spice Paste:
- 5 Shallots
- 3 Garlic Cloves
- 2 cm Ginger
- 3 Candlenuts
- Red Chilies, to taste (for additional heat, use Java bird’s eye chilies if desired)

- Clean the Patin fish thoroughly, then rub with lime juice and salt. Let it marinate for 15 minutes. After marinating, rinse the fish again under cold water and set aside.

- In a blender or food processor, combine shallots, garlic cloves, ginger, and candlenuts. Blend until smooth.
- Heat a bit of oil in a pot over medium heat. Add the blended spice paste and cook until fragrant and slightly caramelized.
