Ikan Kakap Rica Rica: Spicy Red Snapper Recipe

Ingredients:

  • 750 grams red snapper (small-sized, cleaned and cut into 2 pieces)
  • 1 lime
  • Salt, to taste

For the Spice Paste:

  • 8 shallots
  • 5 cloves garlic
  • 15 red chilies
  • 15 bird’s eye chilies (adjust to taste)
  • 1/2-inch galangal (laos)
  • 1/4-inch turmeric
  • 1/4-inch ginger

Additional Ingredients:

  • 3 kaffir lime leaves, torn
  • 2 bay leaves
  • 1 stalk lemongrass, bruised
  • 1 tomato, cut into 4 wedges
  • 1 tablespoon oyster sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon black pepper
  • Salt and sugar, to taste

Instructions:

  1. Prepare the Fish:

    • Begin by cleaning the red snapper thoroughly. Rub the fish with lime juice and salt, then let it marinate for a few minutes.
    • Heat oil in a frying pan and fry the fish until it is cooked through but not too dry. Remove from the pan and set aside to drain.
  2. Prepare the Spice Paste:

    • Blend the shallots, garlic, red chilies, bird’s eye chilies, galangal, turmeric, and ginger into a smooth paste.
  3. Cook the Spice Paste:

    • In the same pan, heat a little oil and sauté the spice paste until fragrant and the color changes.
    • Add the kaffir lime leaves, bay leaves, lemongrass, and tomato wedges. Season with salt and stir until the tomato starts to soften.
  4. Add the Seasonings:

    • Pour in a small amount of water to cover the spice mixture lightly. Stir in sugar, oyster sauce, sweet soy sauce, ground coriander, and black pepper. Mix well and adjust the taste as needed.
  5. Combine with the Fish:

    • Gently place the fried red snapper into the pan. Stir to coat the fish thoroughly with the spice mixture, allowing the flavors to meld together. Let it simmer for a few minutes, stirring occasionally, until the sauce has thickened and absorbed into the fish.
  6. Final Adjustments:

    • Check the seasoning and adjust salt and sugar as necessary. Continue cooking until the sauce reduces to a desired consistency but ensure the dish does not dry out completely.
  7. Serve:

    • Remove from heat and serve hot with freshly steamed white rice.
