Bay leaves 2 leaves
Sugar To taste
Royco seasoning To taste
Tomato Half a tomato

Instructions

  1. Prepare the Tempeh and Tofu: Start by cutting the tempeh and tofu into matchstick shapes (Korek). Heat oil in a pan and fry them until they turn golden brown and crispy. Ensure they are thoroughly cooked but not overly dry.

  2. Fry the Dried Anchovies: In the same pan, fry the dried anchovies until they are crispy but still retain a bit of moisture, as you want to avoid a too-dry texture that might be hard on the teeth.

  3. Make the Sambal: In a blender, combine the red chili peppers, fried garlic, fried shallots, and half a tomato. Blend until you achieve a smooth mixture.

  4. Cook the Sambal: In a pan, heat a little oil and add the bay leaves. Once fragrant, pour in the blended sambal mixture and sauté until it releases a delightful aroma, stirring occasionally.

  5. Combine Ingredients: Add the fried tempeh, tofu, and dried anchovies to the pan. Gently stir to combine all the ingredients, allowing them to soak up the sambal flavor.

  6. Season: Add sugar to taste and a sprinkle of Royco seasoning. Mix well and adjust the seasoning according to your preference. Once everything is well combined and heated through, turn off the heat.
