Telur Balado: A Spicy Indonesian Egg Dish
Ingredients:
- 7 hard-boiled eggs
- 5 shallots
- 3 cloves garlic
- 1 tomato
- 5 curly red chilies
- 10 bird’s eye chilies (adjust to taste)
- 1 teaspoon mushroom seasoning powder (or a similar bouillon cube)
- 2 bay leaves
- 1 tablespoon sweet soy sauce
- Sugar and salt to taste
- Cooking oil
- 1 cm shrimp paste (terasi udang)

Heat a generous amount of cooking oil in a pan. Gently fry the peeled hard-boiled eggs until they are golden brown. Remove from the pan and set aside. -
Prepare the Spice Paste:
Boil the red chilies, shallots, garlic, and tomato until they are soft. Drain and blend these ingredients into a smooth paste, adding the shrimp paste, sugar, and salt. Adjust the seasoning according to your taste preferences. -
Cook the Spice Paste:
In the same pan, add a bit more oil if needed and sauté the blended spice paste until it starts to sputter and releases a fragrant aroma. Add the bay leaves, sweet soy sauce, and mushroom seasoning powder. Stir well to combine. -
Combine Ingredients:
Gently add the fried eggs to the pan with the spice paste. Stir to coat the eggs thoroughly with the sauce. If the mixture is too thick, add a small amount of water to loosen it. -
Simmer and Adjust:
Reduce the heat to low and let the eggs simmer in the sauce, allowing the flavors to meld and the sauce to slightly thicken. Taste and adjust seasoning with more salt or sugar if needed. -
Serve:
Once the eggs have absorbed the flavors and the sauce has reached the desired consistency, remove from heat. Serve hot as a delicious and spicy side dish or main course.
