Balado Tahu Telur (Spicy Fried Tofu and Egg)

Ingredients:

  • 5 eggs
  • 5 medium-sized tofu blocks
  • 10 bird’s eye chilies (adjust to taste)
  • 4 large red chilies
  • 6 shallots
  • 3 cloves of garlic
  • Salt, sugar, and seasoning to taste
  • Water as needed
  • Cooking oil

Preparation Steps:

  1. Boil the Eggs:

    • Place the eggs in a pot and cover with water. Boil for about 15 minutes until fully cooked.
    • Once done, let the eggs cool down, then peel them.
  2. Fry the Tofu and Eggs:

    • Cut the tofu into medium-sized blocks.
    • Heat a generous amount of cooking oil in a frying pan over medium heat.
    • Fry the tofu until it is half-cooked, then set it aside.
    • In the same pan, fry the peeled eggs until the outer layer turns a light brown color. Remove and set aside.
  3. Prepare the Spice Paste:

    • Blend or pound together the shallots, garlic, bird’s eye chilies, and large red chilies until you achieve a smooth paste. You can use a blender for convenience or a traditional mortar and pestle for a more rustic texture.
  4. Cook the Spice Paste:

    • In a clean frying pan, heat a bit of cooking oil over medium heat.
    • Add the spice paste and stir-fry until it becomes fragrant.
    • Add a small amount of water to the pan to prevent the paste from sticking to the bottom.
  5. Combine and Simmer:

    • Add the fried tofu and eggs to the pan with the spice paste.
    • Stir gently to coat the tofu and eggs evenly with the spice mixture.
    • Season with salt, sugar, and any additional seasoning to taste. Adjust the flavors as needed.
  6. Serve:

    • Once everything is well-mixed and heated through, remove from heat.
    • Serve hot with steamed rice for a delicious and satisfying meal.

Tips:

  • Adjust the amount of chilies to suit your heat preference. If you prefer a milder dish, reduce the number of bird’s eye chilies.
  • For an extra layer of flavor, you can add a couple of bay leaves to the spice paste while it’s cooking.
  • Ensure that the eggs and tofu are well-coated with the spicy paste for maximum flavor.

Enjoy this flavorful Balado Tahu Telur with a side of warm rice. The combination of spicy, savory, and rich flavors will surely make this dish a favorite in your home. Happy cooking! 😊
