Spicy Indonesian Tofu and Potato Stew

Savory Indonesian Tahu & Kentang Stew

Ingredients:

  • 5 pieces of white tofu, cut into cubes
  • 4 potatoes, peeled and halved
  • 2 stalks of lemongrass, smashed
  • 2 bay leaves
  • 3 tablespoons sweet soy sauce (you can use Arni’s 2 tablespoons)
  • 1 stick of cinnamon
  • 1/2 teaspoon ground nutmeg (or 1/4 of a whole nutmeg, as per Arni’s suggestion)
  • 1/2 piece of palm sugar
  • 1 sachet of bouillon powder
  • For the spice paste:
    • 5 cloves garlic
    • 3 shallots
    • 1 piece of ginger
    • 1 teaspoon ground coriander
    • 5 candlenuts
    • 1 teaspoon ground black pepper

Instructions:

  1. Prepare the Spice Paste:

    • Start by blending the garlic, shallots, ginger, ground coriander, candlenuts, and black pepper into a smooth paste.
  2. Sauté the Spice Paste:

    • Heat a bit of oil in a large pan over medium heat. Add the spice paste and sauté until fragrant and golden brown.
  3. Add the Liquids and Aromatics:

    • Pour in enough water to cover the ingredients. Add the lemongrass, bay leaves, cinnamon stick, and ground nutmeg. Stir to combine.
  4. Cook the Potatoes:

    • Add the potato halves to the pan, ensuring they are submerged in the liquid. Season with palm sugar, bouillon powder, salt to taste, and sweet soy sauce. Stir well.
  5. Simmer:

    • Allow the mixture to come to a boil. Once boiling, reduce the heat to low and simmer until the potatoes are tender and the sauce thickens.
  6. Add Tofu:

    • Gently add the tofu cubes to the pan. Stir carefully to avoid breaking the tofu. Continue cooking until the tofu is heated through and the sauce has reduced and thickened.
  7. Final Touches:

    • Check the seasoning and adjust if necessary. Once all the flavors are well combined and the sauce has a rich consistency, remove from heat.
  8. Serve:

    • Serve the Semur Tahu & Kentang hot. Enjoy this hearty, flavorful dish with steamed rice for a complete meal.
