Pepes Tahu Pedas Recipe

Ingredients:

  • For the Tofu:

    • 1-2 blocks of tofu
  • For the Spice Paste:

    • 7 shallots
    • 4 garlic cloves
    • 5 red chilies
    • 15 small chilies (adjust to taste)
    • 3 candlenuts
    • 2 cm shrimp paste
    • 1 teaspoon brown sugar
    • 1/2 teaspoon ground black pepper
    • Salt to taste
  • For Garnish:

    • 4 kaffir lime leaves, finely sliced
    • Banana leaves, as needed

Instructions:

  1. Prepare the Spice Paste:
    Begin by blending the shallots, garlic, red chilies, small chilies, candlenuts, shrimp paste, brown sugar, black pepper, and salt into a smooth paste. Add the finely sliced kaffir lime leaves to the spice paste and mix well.

  2. Prepare the Tofu:
    Cut the tofu into small pieces, as desired.

  3. Assemble the Pepes Tahu:
    Lay out the banana leaves and cut them into squares large enough to wrap around the tofu pieces. Place a portion of the spice paste on each piece of tofu and wrap them securely in the banana leaves.

  4. Steam the Tofu:
    Arrange the wrapped tofu in a steamer. Steam over medium heat for approximately 20 minutes, allowing the flavors to meld and the tofu to absorb the spices.

  5. Serve:
    Carefully unwrap the banana leaves and serve the Pepes Tahu Pedas hot. Enjoy as a flavorful side dish or as a main course with rice.
