Sundubu Jjigae: Spicy Korean Soft Tofu Stew

Ingredients

Small cabbage 1/4 head, sliced
Egg 1, beaten
Onion (large) 1, sliced lengthwise
Green onion 1 stalk, sliced diagonally
Lime juice 2 tablespoons
Salt To taste
Sugar To taste
Chili powder To taste
Cooking oil As needed
Water Approximately 500 ml

For the Spice Blend:

Red shallots 2 cloves
Garlic 1 clove
Red bell peppers 2 pieces
Bird’s eye chili (or to taste) 5 pieces
Small tomato 1 piece

Instructions

  1. Prepare the Spice Blend:
    In a blender or food processor, combine the red shallots, garlic, red bell peppers, bird’s eye chili, and the small tomato. Blend until a smooth paste forms. This aromatic mixture will be the base of your stew.

  2. Sauté the Spice Blend:
    In a pot, heat some cooking oil over medium heat. Add the blended spice mixture and sauté until it becomes fragrant and well-cooked, about 3-5 minutes.

  3. Add Water:
    Pour in approximately 500 ml of water, stirring to combine with the sautéed spices. Allow the mixture to come to a boil.

  4. Incorporate the Vegetables:
    Once boiling, add the cubed tofu, bean sprouts, and sliced cabbage. Season with salt, sugar, chili powder, and lime juice. Allow the vegetables to cook until tender, adjusting seasoning to your taste.

  5. Finish with Egg:
    Reduce the heat slightly, then gently pour in the beaten egg while stirring to create silky strands of egg throughout the stew. Cook until the egg is fully set.

  6. Garnish and Serve:
    Just before serving, sprinkle in the sliced green onion and onion for a fresh crunch. Serve hot, and enjoy the warm, spicy flavors of your homemade Sundubu Jjigae!
