Ingredients:
- 10 idlis, diced
- 10 small onions, finely chopped
- 1 capsicum (green), finely chopped
- 3 green chillies, finely chopped
- 1-inch ginger, finely chopped
- 1 carrot, finely chopped
- ½ cup green beans, finely chopped
- ½ tsp turmeric powder
- ½ tsp mustard seeds
- 6 curry leaves
- 1 tsp urad dal (split black gram)
- 1 tbsp sesame oil
- Fresh mint leaves, finely chopped
- Salt, to taste

Instructions:
- Heat sesame oil in a pan over medium heat. Add mustard seeds and allow them to crackle.
- Add the urad dal and cook for a minute, stirring occasionally, until it turns golden brown.
- Next, add the chopped onions, ginger, green chilies, and curry leaves. Cook until the onions soften.
- Add the diced carrot, capsicum, and green beans to the pan. Season with salt and add a splash of water to help the vegetables cook. Let the mixture cook until the vegetables are tender.
- Stir in the turmeric powder and chopped idlis. Mix everything thoroughly, ensuring the idlis absorb all the flavors.
- Cover the pan and cook for an additional 3 to 4 minutes, allowing the idlis to soften and soak in the spices.
