- 1/4 cup finely chopped red onion

- 2 red chilies, chopped
- 3/4 cup water, divided
- 1 teaspoon cumin seeds
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cardamom
- 1 cup chopped tomatoes
- 1 cup sliced mushrooms
- 1 cup chopped okra
- 1 cup cooked garbanzo beans
- 1 tablespoon vegetable oil
- 1 tablespoon chopped fresh cilantro
- Salt to taste
- 1 teaspoon sugar

Prepare the Mango Relish:
- Start by peeling the mango and cutting off the flesh from the pit.
- Place the mango flesh in a bowl and either mash it using a hand masher or process it with a food processor until smooth.
- Stir in the finely chopped red onion, cilantro, lemon juice, sugar, and salt. Mix thoroughly and set aside.

Prepare the Curry:
- In a clean food processor, combine the garlic cloves, chopped red chilies, and 3 tablespoons of water. Process until the mixture forms a smooth paste.
- Heat the vegetable oil in a large saucepan over medium heat. Add the cumin seeds and let them sizzle for a few seconds to release their flavor.
- Add the ground cumin, ground turmeric, and ground cardamom to the pan, cooking for about a minute until the spices are fragrant.
- Incorporate the garlic-chili paste and cook for an additional minute, allowing the flavors to meld together.
- Stir in the chopped tomatoes and the remaining water. Mix well to combine.
- Add the sliced mushrooms, chopped okra, and cooked garbanzo beans. Stir to ensure all ingredients are well-coated with the spice mixture.
- Bring the curry to a boil, then reduce the heat, cover, and let it simmer for 5 minutes.
- After 5 minutes, remove the lid and increase the heat slightly. Continue cooking for another 8-10 minutes, or until the okra is tender but not overly soft (avoid mushy okra).
- Remove from heat and stir in the chopped fresh cilantro. Adjust salt and sugar to taste.
