This delightful dish features the succulent flavors of Red Snapper fillet, beautifully enhanced by a spicy Padang sauce. It’s perfect for a family dinner or to impress guests with a taste of Indonesia!

Ingredients

Ingredient Quantity
Red Snapper fillet 200 g, cut as desired
Lemon juice 1 tablespoon
Small onion 1, thinly sliced
Garlic cloves 6, crushed
Curly red chili peppers 6, or to taste
Ginger 1 piece, crushed
Kaffir lime leaves 2, remove stems and crush
Bay leaf 1
Oyster sauce ½ tablespoon
Sugar ½ teaspoon
Beef broth ¼ teaspoon
Ground pepper ¼ teaspoon
Flavor enhancer ¼ teaspoon
Water 100 ml
Salt To taste
Cooking oil As needed

Instructions

  1. Prepare the Fish: Rub the Red Snapper fillet with salt and ground pepper, and set aside to marinate briefly.

  2. Make the Spice Paste: In a mortar, grind the garlic and curly red chili peppers together. For extra heat, feel free to add more chili peppers as desired.

  3. Sauté Aromatics: Heat a little cooking oil in a pan over medium heat. Sauté the sliced onion until it becomes soft and translucent. Then, add the ground spice mixture, kaffir lime leaves, bay leaf, and ginger. Cook until fragrant.

  4. Combine Ingredients: Pour in the water, then add sugar, the marinated fish, oyster sauce, beef broth, flavor enhancer, and additional salt. Stir gently to combine all the ingredients.

  5. Simmer: Allow the sauce to simmer until it reduces slightly. Once the sauce thickens and the flavors meld, add the lemon juice to brighten the dish. Adjust seasoning as needed.

  6. Serve: Transfer the dish to a serving plate, ensuring that the fish is well-coated with the flavorful sauce. Enjoy your Fillet Kakap Merah Saus Padang warm with steamed rice.

This dish showcases the ultimate harmony of spices, perfect for any occasion!
