Papuyu Sambal Acan

Ingredients:

  • 6 Papuyu Fish (Papuyu Fish)
  • 3 Shallots
  • 10 Garlic Cloves
  • 2 Bird’s Eye Chilies
  • 2 Large Red Chilies
  • 1 Toasted Shrimp Paste (Terasi)
  • Optional: Ramania or Gandaria Fruit
  • Salt to taste

Instructions:

  1. Prepare the Fish:

    • Begin by frying the Papuyu fish until cooked through. Once done, set the fish aside.
  2. Prepare the Sambal:

    • In a pan, fry the shallots, garlic, bird’s eye chilies, and large red chilies until they are aromatic and slightly softened.
    • Using a mortar and pestle, coarsely grind the fried shallots, garlic, and chilies. Mix in the toasted shrimp paste (terasi) and salt to taste. If using, add the Ramania or Gandaria fruit at this stage.
  3. Combine and Serve:

    • Place the fried Papuyu fish into a serving dish and top with the sambal mixture.
    • Gently mash or press the sambal into the fish to blend the flavors. Serve immediately and enjoy!
