Kalio Ayam Nanas
Ingredients
- 1 large young pineapple, peeled and cut into pieces (approximately 4 cm)
- 1.5 kg free-range chicken, cut into pieces and cleaned
- 1.5 oz ground red chili paste
- 1 kg coconut milk
- 10 shallots
- 4-5 cloves garlic
- 2 thumb-sized pieces of ginger
- 1 pinky-sized piece of turmeric
- 1 finger-sized piece of galangal
- 3 stalks lemongrass, white parts only
- 2 turmeric leaves
- 5 kaffir lime leaves
- 2 bay leaves
- 2 candlenuts
- 1 teaspoon granulated sugar
- 1 tablespoon ground coriander
- Salt to taste
- Additional flavor enhancers (Masako or Royco) if desired

Preparation: Clean and cut the chicken into desired pieces. Peel and cut the pineapple into small pieces. Set aside.

Spice Paste: Blend the shallots, garlic, ginger, turmeric, galangal, lemongrass, candlenuts, ground coriander, and red chili paste into a smooth paste. Set aside the leaves (turmeric, kaffir lime, bay leaves).

Cooking:
- Heat a bit of oil in a large pot over medium heat. Add the blended spice paste and sauté until fragrant.
- Add the chicken pieces to the pot and stir well to coat the chicken with the spice mixture. Cook until the chicken begins to brown and the spices are well absorbed.
- Pour in the coconut milk and add the turmeric leaves, kaffir lime leaves, and bay leaves. Since the chicken is free-range, add an additional 1/2 liter of water to ensure thorough cooking.
- Bring the mixture to a boil, then reduce the heat to medium. Cook until the sauce thickens and the chicken is tender.
- Add the pineapple pieces to the pot and season with sugar, salt, and additional flavor enhancers if using. Stir well and cook until the pineapple is tender and the flavors are well combined.
- Taste and adjust the seasoning as needed.

Serving: Once the dish is fully cooked and the flavors have melded together, remove from heat. Serve the Kalio Ayam Nanas hot with steamed rice.
