Spicy Red Egg Delight Recipe

Ingredients:

  • 4 large eggs
  • 4 red curly chilies (or 2 large red chilies, to taste)
  • 5 bird’s eye chilies (adjust to desired spiciness)
  • 3 shallots
  • 2 garlic cloves
  • 2 candlenuts
  • 1 bunch of green onions, chopped
  • Salt, to taste
  • White sugar, to taste
  • 2 tablespoons chicken-flavored seasoning (like Royco)
  • 2 tablespoons cooking oil
  • Water, as needed

Instructions:

  1. Prepare the Eggs:

    • Boil the eggs in a pot of water for about 15-20 minutes, or until the yolks are fully cooked. Once done, remove the eggs, let them cool, then peel and cut them in half. You can also leave them whole if preferred.
  2. Fry the Eggs:

    • Heat some oil or margarine in a pan and briefly fry the egg halves. Once lightly crisped, remove them from the pan and set aside.
  3. Make the Spice Paste:

    • In a blender, combine the shallots, garlic, candlenuts, red chilies, bird’s eye chilies, salt, and a little water to make a smooth spice paste.
  4. Cook the Spice Paste:

    • Heat the cooking oil in a pan over medium heat. Sauté the spice paste until it becomes fragrant.
  5. Add Seasonings:

    • Add the white sugar and chicken-flavored seasoning to the pan. Adjust the seasoning to taste. Stir in the chopped green onions and a bit of water to create a sauce. Let it simmer for a few minutes.
  6. Combine the Eggs and Sauce:

    • Gently add the fried eggs to the pan with the sauce. Stir carefully to coat the eggs with the sauce and allow the flavors to meld together. Cook until the sauce has reduced to your desired consistency.
  7. Serve:

    • Once the sauce has thickened and the eggs are well-coated, remove from heat. Serve the Spicy Red Eggs warm and enjoy!
