Ingredients:

  • 5 large eggs
  • 5 shallots
  • 5 cloves of garlic
  • 10 red chilies (adjust to taste for spiciness)
  • 2 ripe tomatoes
  • Salt and sugar to taste
  • 2 bay leaves
  • 2 cm galangal, smashed
  • Seasoning (optional; omitted in this version)
  • Cooking oil for sautéing
  • 350 ml water (about 1 cup)

Instructions:

  1. Prepare the Eggs: Begin by frying the eggs sunny-side up until they are cooked to your liking. Once done, set them aside for later use.

  2. Cook the Aromatics: In a pot, boil the shallots, garlic, red chilies, and tomatoes together until they are softened and the colors have intensified. This step helps in achieving a vibrant red color for the sauce.
