Spicy Fried Eggs with Red Seasoning Sauce (Telor Ceplok Bumbu Pedas)
Ingredients:
- 5 large eggs
- A pinch of salt
- 2 tablespoons Red Basic Seasoning Paste (Bumbu Dasar Merah)
- 2 cloves garlic, minced
- 3 shallots, finely chopped
- 3 red chili peppers (rawit merah), sliced
- 2 bay leaves
- 2 kaffir lime leaves
- 1 teaspoon sesame oil
- 2 tablespoons cooking oil
- Salt, to taste
- Sugar, to taste
- Seasoning powder, to taste
- A pinch of ground black pepper
- A small amount of water
Instructions:
-
Prepare the Ingredients: Slice the red chili peppers and finely chop the garlic and shallots.
-
Heat the Oil: In a large skillet or frying pan, heat the cooking oil over medium heat. Once hot, add the garlic and shallots, and sauté until fragrant and golden.
-
Add Aromatics: Add the bay leaves, kaffir lime leaves, and sliced red chili peppers to the pan. Continue to cook for a minute to infuse the flavors.
-
Incorporate Seasoning Paste: Stir in the Red Basic Seasoning Paste. Cook until the paste is fragrant and begins to darken slightly.
-
Adjust Seasoning: Pour in a small amount of water, and then add salt, sugar, and seasoning powder to taste. Stir in the sesame oil and ground black pepper. Adjust the seasoning as needed.
-
Add the Eggs: Gently place the fried eggs into the skillet, ensuring they are coated with the sauce. Be careful not to stir too vigorously, as this can break the eggs.
-
Simmer: Allow the eggs to cook in the sauce until they are heated through and have absorbed the flavors, about 5-7 minutes.
-
Serve: Transfer the eggs to a serving dish and enjoy hot.
This dish pairs wonderfully with steamed rice and is perfect for those who enjoy a spicy and flavorful twist on a simple egg recipe.
