Spicy Fried Eggs with Red Seasoning Sauce (Telor Ceplok Bumbu Pedas)

Ingredients:

  • 5 large eggs
  • A pinch of salt
  • 2 tablespoons Red Basic Seasoning Paste (Bumbu Dasar Merah)
  • 2 cloves garlic, minced
  • 3 shallots, finely chopped
  • 3 red chili peppers (rawit merah), sliced
  • 2 bay leaves
  • 2 kaffir lime leaves
  • 1 teaspoon sesame oil
  • 2 tablespoons cooking oil
  • Salt, to taste
  • Sugar, to taste
  • Seasoning powder, to taste
  • A pinch of ground black pepper
  • A small amount of water

Instructions:

  1. Prepare the Ingredients: Slice the red chili peppers and finely chop the garlic and shallots.

  2. Heat the Oil: In a large skillet or frying pan, heat the cooking oil over medium heat. Once hot, add the garlic and shallots, and sauté until fragrant and golden.

  3. Add Aromatics: Add the bay leaves, kaffir lime leaves, and sliced red chili peppers to the pan. Continue to cook for a minute to infuse the flavors.

  4. Incorporate Seasoning Paste: Stir in the Red Basic Seasoning Paste. Cook until the paste is fragrant and begins to darken slightly.

  5. Adjust Seasoning: Pour in a small amount of water, and then add salt, sugar, and seasoning powder to taste. Stir in the sesame oil and ground black pepper. Adjust the seasoning as needed.

  6. Add the Eggs: Gently place the fried eggs into the skillet, ensuring they are coated with the sauce. Be careful not to stir too vigorously, as this can break the eggs.

  7. Simmer: Allow the eggs to cook in the sauce until they are heated through and have absorbed the flavors, about 5-7 minutes.

  8. Serve: Transfer the eggs to a serving dish and enjoy hot.
