Oseng Ampela Tahu (Sautéed Chicken Gizzards with Tofu)

Ingredients:

  • 8 blocks of white tofu
  • 1/4 whole chicken gizzard (ampela)
  • 10 red chilies
  • 4 shallots
  • 3 cloves garlic
  • Salt and MSG (monosodium glutamate) to taste
  • Soy sauce (optional, for added flavor)

Instructions:

  1. Prepare the Chicken Gizzard: Begin by boiling the chicken gizzard in water until it becomes tender. There’s no need to add any seasoning during this step. Once cooked, set aside.

  2. Fry the Tofu: Cut the tofu into small cubes and fry them in oil until they are half-cooked and lightly golden. Remove from the pan and drain on paper towels.

  3. Make the Spice Paste: Using a mortar and pestle, grind the red chilies, shallots, and garlic into a smooth paste.

  4. Cook the Paste: Heat oil in a pan over medium heat. Add the spice paste and sauté until the paste is aromatic and cooked through.

  5. Combine Ingredients: Slice the cooked chicken gizzard into bite-sized pieces. Add the gizzard and fried tofu to the pan with the spice paste. Stir well to combine.

  6. Season and Serve: Add salt and MSG to taste. If desired, add a splash of soy sauce for extra flavor. Continue to cook for a few more minutes until everything is well mixed and heated through.
