Ayam Suwir (Shredded Chicken)
Ingredients:
- 500 grams chicken breast fillet, boiled and shredded
- 1 stalk lemongrass, bruised
- For the spice paste:
- 4 cloves garlic
- 5 shallots
- 10 red curly chilies
- 1 piece ginger (about 1-inch)
- 2 candlenuts
- 1 piece turmeric (about 1-inch)
- To taste: sugar, salt, and mushroom stock powder

Prepare the Spice Paste: In a blender or food processor, combine the garlic, shallots, red curly chilies, ginger, candlenuts, and turmeric. Blend until you achieve a smooth paste.

Sauté the Spice Paste: Heat a little oil in a large skillet or wok over medium heat. Add the spice paste and sauté until fragrant and the oil starts to separate from the paste.

Add Lemongrass and Seasonings: Add the bruised lemongrass to the skillet, followed by a splash of water to loosen the paste. Stir in sugar, salt, and mushroom stock powder according to your taste preference.

Cook the Chicken: Once the seasonings are well incorporated and the mixture is aromatic, add the shredded chicken. Stir well to combine and cook until the liquid reduces and the chicken is well coated with the spice mixture. Continue stirring until the sauce thickens and most of the liquid has evaporated.
