Ingredients:

  • 3 large eggs

  • 5 bird’s eye chilies (adjust to taste)
  • 2 kaffir lime leaves
  • 2 medium potatoes
  • Soy sauce
  • Salt
  • Sugar
  • Black pepper
  • Cooking oil (for frying)
  • Butter or margarine (optional, for frying eggs)

Instructions:

  1. Prepare the Potatoes: Peel the potatoes and cut them into your desired shape. Soak them in water to prevent discoloration. Heat oil in a pan and fry the potatoes until they are halfway cooked and lightly golden. Remove and set aside.

  2. Cook the Eggs: In a separate pan, melt some butter or margarine over medium heat. Fry the eggs sunny-side up until the whites are set but the yolks are still runny. Set aside.
