Ingredients

For Spinach Stir-Fry (Sayur Bayam)

Ingredient Quantity
Spinach 1 bunch
Red onions 3 pieces
Garlic 1 clove
Red chili peppers 3 pieces

For Tempeh Sambal

Ingredient Quantity
Tempeh ½ block
Grilled shrimp paste (terasi) 1 piece
Aromatic ginger (kencur) 3 pieces
Red onions 3 pieces
Garlic 2 cloves
Curly red chili peppers 3 pieces
Bird’s eye chili (cabe rawit) 3 pieces

Instructions

Preparing the Spinach Stir-Fry (Sayur Bayam)

  1. Prepare the Spinach: Start by washing the spinach thoroughly under cold water. Then, chop the spinach into manageable pieces and set aside.

  2. Sauté the Aromatics: Slice the red onions, garlic, and red chili peppers thinly. In a pot of cold water, add the sliced ingredients.

  3. Cook the Spinach: Bring the pot to a boil. Once boiling, add the chopped spinach. Stir gently for a minute or two until the spinach wilts. Remember not to add salt at this stage, as the sambal will provide enough seasoning.

Making the Tempeh Sambal

  1. Prepare the Sambal: In a mortar and pestle, or using a food processor, grind together the red chili peppers, bird’s eye chili, aromatic ginger, red onions, garlic, and grilled shrimp paste until you achieve a smooth paste.

  2. Cook the Tempeh: Cut the tempeh into your desired size. Boil, steam, or grill the tempeh until fully cooked, which usually takes about 10-15 minutes.

  3. Combine: Once the tempeh is cooked, mix it with the sambal paste. Ensure that the tempeh is well-coated and the flavors meld together.
