Stir-Fried Water Spinach with Tofu
Ingredients:
- 2 bunches water spinach (kangkung)
- Tofu, as needed
- 3 cloves garlic
- 3 shallots
- 4 small red chilies (or to taste)
- Palm sugar, to taste
- Salt, to taste
- Chicken bouillon powder, to taste
- Ladaku seasoning, to taste
- Soy sauce, to taste
- Tomato sauce, to taste
- Water, as needed
Instructions:

Begin by washing all the ingredients thoroughly. Cut the water spinach into manageable sections. Dice the tofu into small cubes and fry until golden brown. Set aside.

In a mortar and pestle, grind the garlic, shallots, and salt into a fine paste.

Heat a pan over medium heat and add a little oil. Sauté the ground spice mixture until fragrant. Add a splash of water to help release the flavors.

Add the chopped water spinach and fried tofu to the pan. Season with palm sugar, chicken bouillon powder, soy sauce, and Ladaku seasoning. Stir well to combine all the flavors.

Continue to cook until the spinach is tender and the flavors are well-blended. Adjust seasoning with additional soy sauce or tomato sauce if desired.

Once everything is cooked through and the spinach is tender, remove from heat and serve hot.
