Tempe Mercon Recipe

Ingredients:

Main Ingredients For the Filling
1 block tempe 4 shallots
All-purpose flour 2 garlic cloves
Green onions (onclang) 5 chili peppers (adjust to your spice preference)
Salt A pinch of kencur (aromatic ginger)
Royco seasoning A pinch of salt
Water A pinch of MSG (optional)
Oil for frying

Instructions:

  1. Begin by cutting the tempe into small cubes, then slice each piece in half to create pockets for filling.

  2. Next, blend the spices for the batter, which include shallots, garlic, coriander, and turmeric until smooth.

  3. Chop the green onions finely, and combine them with the blended spices, then mix in water and all-purpose flour to form a batter.

  4. Prepare the filling by crushing the shallots, garlic, chili peppers, and kencur together, adding a bit of salt and MSG to taste.

  5. Carefully stuff each tempe pocket with the prepared filling.

  6. Heat a frying pan with oil over medium heat.

  7. Dip each stuffed tempe piece into the batter, ensuring it’s well-coated, and gently place them in the hot oil.

  8. Fry until golden brown and crispy, then remove and drain on paper towels.
